韓国風ピリカラ牛すじスープを作ってみた
すじ肉と言えば定番はやっぱり甘辛く煮込んだ牛すじの煮込みとか
カレーとかだと思いますが、せっかくの神戸牛なので素材の味を生かした
調理をしようと考えた結果、牛すじスープを作る事に決めました。
今回の日記はちょっぴりレシピ風です♪
ただ、漢の料理なので、分量とかはかなりアバウトです(笑)
◎材料
牛すじ肉：500gくらい
大根：5分の1
玉ねぎ：半分
ネギ：2本くらい
しいたけ：２枚(好きなので多めに入れました)
人参：少量(あんまり好きくないのですが彩りの為しゃあなしで。。)
生姜：少量
ニンニク：少量
塩・こしょう・しょうゆ・鶏がらの素・コチュジャン：適量
1. 今回もらった牛すじは結構脂がいっぱいだったので、まず沸騰したお湯に牛肉を
入れて脂を取ります。(2～3分くらい)
2. 圧力鍋に水と牛すじと生姜を入れて10分位煮込みます。
3. 煮込み終わったら、牛すじをざるに入れて軽く水洗いします。この時煮汁は捨てない
で下さい。
4. 水洗いした牛すじとコチュジャン・ごま油を混ぜ込み少し寝かせます。
5. 4を寝かせている間に野菜を切り、すじ肉の煮汁のアクをとって別の容器に移して
おきます。
6. 鍋に油をひき、にんにく・肉・野菜の順にいためます。
7. ある程度炒まったら、2で作った煮汁を鍋に入れ塩・コショウ・醤油・鶏がらスープ
で味付をします。
8. 後は、野菜がいい感じに煮こまったらもやしを入れて沸騰したら完成！！
食べた感想ですが、いや～めちゃくちゃ美味かったです
さすがに神戸牛だけあって、すごくいいコクが出ていました。
肉自体も圧力鍋で煮込んだのでめちゃくちゃ柔らかかったです。
後、脂っこいかなって思っていたのですが意外とあっさりしていて、何杯でもいける
感じでした。
今回は家にある食材のみで作ったので、ニラを入れてないのですが、ニラがあったら
たぶんもっと美味しくなるハズ☆
